I always drop by the coffee shop whenever I go to work or run some errands and if I have more time, then I usually enjoy it with some pastry on the side, and one of my favorites is crumble cake. I can’t take the crumble cake out of my mind and I find myself always craving it, so I thought why not just try to learn a similar recipe, that way I can have it any time I want and in larger portions.

Among all of the recipes that I’ve tried online, this one by Easy Quick Recipes on YouTube has the closest taste to what I usually order from the coffee shop. It was surprisingly easy to make and the ingredients can also be modified to fit your taste and preference, especially if you want your crumble cake to have more topping or the cake itself to have a hint of coffee.

Step 1
Preheat your oven to 170°C or 338°F, then line a well-greased 8-inch square cake pan with parchment paper at the bottom and sides, and set it aside. In a large bowl, add the butter, brown sugar, ground cinnamon, and chopped nuts, then mix them until well combined, and set it aside in the fridge to chill until needed.
Step 2
In another bowl, beat the sugar and butter for about 2 to 3 minutes, then scrape the sides, and fold it well with a spatula. Add the vegetable oil, then beat for 1 minute before adding the eggs, and continue beating for another minute. Scrape and fold, then add the yogurt, beat for 1 minute, and sift over the flour and baking powder.
Step 3
Give them a good mix and fold until combined, then add the vanilla extract and almond essence, beat for 20 seconds, and give it a final mix making sure to scrape the sides well. Transfer the mixture to the prepared cake pan, then spread it evenly, and top it with jam or jelly.
Step 4
Cover it with the prepared crunchy nut topping, then place it in the preheated oven, and let it bake for about 35 to 40 minutes. Once done baking, let it cool completely while preparing the icing, then peel off the paper, and glaze it with the icing. Slice, serve, and enjoy!
