Step 1
In the crockpot, pour in the condensed milk, peanut butter, and white chocolate chips, then stir everything together to combine, and turn your crockpot into a low setting. Let the mixture cook while uncovered for about 40 to 50 minutes, then make sure to stir them every 10 minutes until all of the white chocolate chips have melted and the mixture is thick.
Step 2
Line a 9×13-inch baking pan with parchment paper lengthwise, then grease the bare sides of the pan with butter or nonstick cooking spray, and set it aside. Once the fudge is thick and ready, turn off the crockpot, then pour in the roasted peanuts, and add in the vanilla extract.

Step 3
Give them a good stir until evenly combined, then transfer the fudge into the prepared baking pan, and spread them as evenly as possible. Place it on the refrigerator, then allow it to set for at least 3 hours or up to overnight. Once ready to serve, remove the fudge from the fridge, then unmold it, and cut it into squares at about 1 inch. Serve and enjoy!
