There are a lot of things that I do in a day and sometimes I get too busy to prepare my own food which then leads me to order takeout. Although this sounds convenient, I still love to eat home-cooked meals that are tasty and hearty, but at the same time, I also want a dish that I can make quickly without the hassle or with little to no effort at all.

That’s when I tried looking for recipes or at least a dish that I can easily make at home, and I ended up learning this lemon butter chicken by This Southern Girl Can on YouTube which is everything that I ever wanted in a dish. It’s super simple and quick to prepare, and you can just wait for it to cook while you get yourself busy again.
Ingredients for Crockpot Lemon Butter Chicken:
- 8 chicken thighs, boneless and skinless
- Salt and pepper, to taste
- 2 tsp of garlic powder
- 2 tsp of onion powder
- 2 tsp of smoked paprika
- 2 tbsp of minced garlic
- 2 tsp of Italian seasoning
- ½ stick of butter, cut into pieces
- Zest of a large lemon
- 1/3 cup of chicken broth or stock
- Fresh parsley
- Lemon slices
How to Make Crockpot Lemon Butter Chicken:
Step 1
In a small bowl, add the salt, pepper, garlic powder, onion powder, paprika, minced garlic, and Italian seasoning, then add the lemon zest or grate it over the seasonings, and then mix everything to combine.
Step 2
Clean the chicken and put it in the crockpot, then put the seasoning mixture, and give them a good toss until evenly coated.
Step 3
Pour in the chicken broth or stock, then put the pieces of butter followed by the lemon sliced (use the lemon you zested earlier), and place the fresh parsley on top as well.
Step 4
Cover the crockpot with the lid, then allow it to cook on a high setting for about 3 hours or on a low setting for about 6 hours, and serve. Enjoy!
