Step 1
Cut the meat into chunks, then place them in the crockpot, and add in the dried oregano, ground cumin, ground cloves, minced onion, minced garlic, chipotle peppers in adobo sauce, green chilies, lime juice, salt, and pepper.
Step 2
Mix everything until well combined, then place a few dried bay leaves on top, and cover the crockpot with the lid. Allow the meat to cook for about 6 to 8 hours on a low setting, then take out the meat, and transfer it to a separate plate.
Step 3
Shred the meat using 2 forks, then put the shredded meat back into the crockpot, and stir them well to incorporate. Garnish it with some freshly chopped cilantro, then serve, and enjoy!
