This set-and-forget recipe makes the beef short ribs so tender that the meat falls off the bone, and you can turn its rendered juice into a matching gravy, too, so nothing goes to waste. Ingredients:

Short Ribs

  • 1 tbsp of oil
  • meaty beef short ribs
  • onion, peeled and chopped
  • 3 cloves of garlic, peeled and minced
  • 240ml or 1 cup of red wine
  • 640ml or 2¾ cups of beef stock
  • 1 tsp of dried thyme
  • 1 tbsp of tomato puree or paste
  • 1 tsp of sugar
  • bay leaves
  • ¼ tsp of salt
  • ¼ tsp of pepper
  • 1 tbsp of Worcestershire sauce

Gravy

  • 2 tbsp of cornstarch
  • 5 tbsp of cold water

For Serving

  • Creamy mashed potato
  • Green vegetables

Directions:

Step 1

Place a large frying pan on a stove over high heat or use your slow cooker instead and put it in the searing function, then heat the oil, and place the short ribs. Sear them for about 10 minutes or until all sides are nice and brown, then add the onion, and cook them for 2 more minutes while stirring consistently.

Step 2

Add the garlic, then continue to cook them for 1 minute, and pour in the wine. Allow it to simmer for about 3 to 4 minutes or until bubbling, then add in the beef stock, dried thyme, tomato puree or paste, sugar, bay leaves, salt, pepper, and Worcestershire sauce, and stir everything together until combined.

Step 3

Bring it to a simmer, then transfer it to the crockpot if you’re using a frying pan, and put the lid on. Allow it to cook on a low setting for about 6 to 8 hours, then place a saucepan on a stove over high heat, and ladle most of the cooking liquid from the slow cooker into the saucepan.

Step 4

Heat it over high heat until bubbling, then slowly pour in the water and cornstarch mixture while whisking continuously until thickened, and turn off the slow cooker. Serve the short rib on top of mashed potatoes, then pour some gravy over it, and enjoy!
