  • 15 oz can of whole corn (drained)
  • 1 cup salsa (mild, medium, spicy)
  • 1 cup crushed tomatoes
  • 3 tbsp taco seasoning (if you don’t have one, refer to the homemade taco seasoning below)
  • 2 1/2 cups chicken broth
  • 1 cup cheddar cheese (shredded)
  • 12 – 15 oz pasta shells
  • salt and pepper (to taste)

For taco seasoning:

  • 1 tbsp chili powder
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp red pepper flakes (crushed)
  • 1/4 tsp dried oregano
  • 1/2 tsp paprika
  • 1 1/2 tsp ground cumin
  • 1 tsp sea salt

Directions:

Step 1

Prepare all the ingredients. In a pan at medium-high, add 1 lb of lean ground meat. Season it with some ground pepper and salt and 3 tbsp taco seasoning. Mix it until the ground beef is no longer pink. Set it aside. Next, add the ground beef, diced bell pepper, 1 cup of crushed tomatoes, 1 cup of salsa, 15 oz can drain whole corn, and 2 1/2 cups of chicken broth. Stir the ingredients inside the crock pot.

Step 2

Put the lid and set it on low for five hours. After five hours, taste first the sauce if it needs some adjustments, then add the pasta shells. Put the lid back on and cook it for another 20 minutes on high. (Check the dish after 10 minutes and stir it around.) After 20 minutes, add 1 cup shredded cheddar cheese and give it a good mix. Transfer it to a bowl then serve.
