This crispy and tasty skin is loaded with cheese, bacon bits, and sour cream, the perfect balance of taste that will surely make you want more than just one serving. Once you’ve tried this dish you’ll never want potatoes served any other way.

Ingredients for Oven-Baked Potato Skins:

  • 4 Russet potatoes
  • 1 tsp of lemon pepper
  • 1 tsp of dry parsley
  • 3 tsp of unsalted butter
  • Sour cream
  • Green onion, freshly chopped
  • Cheddar cheese, shredded
  • Bacon strips

How to Make Oven-Baked Potato Skins:

Step 1

Scrub and rinse the potatoes clean, then pat them dry, and prick them all over with a fork. Drizzle them with oil and rub them until coated, then season them with salt, and cover each piece in individual sheets of aluminum. Crumple and wrap the foil nicely, then place them in a wire rack evenly and put them in a preheated oven at 400°F.

Step 2

Allow them to bake for about 1 hour, then while waiting for the potatoes to cook, lay the bacon strips on a baking sheet lined with aluminum foil, and bake the bacon strips for about 10 minutes or until crispy. Allow them to cool down a bit, then chop them into bits, and set them aside.

Step 3

Once the potatoes are done cooking, remove them from the foil, then carefully cut them through in half lengthwise as shown in the video, and start scraping off the flesh leaving out a potato shell. Set aside the scraped flesh for mashed potatoes if you want. In a small bowl, melt the butter, then add the lemon pepper and dry parsley, and give them a good mix until combined.

Step 4

Brush the mixture generously on the inside of each potato shell, then add shredded cheese in each, and put them back in the oven to bake for at least 10 minutes or until melted. Add the bacon bits in each potato shell dividing them evenly, then top them with chopped green onions and a small dollop of sour cream, and serve. Enjoy!
