Ingredients:

  • 4 medium or large potatoes, red, gold, or russet
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp Italian seasoning
  • ½ tsp pepper
  • 1½ tsp chili powder
  • 1 tsp smoked paprika
  • 1½ tbsp bread crumbs
  • 2 tbsp parmesan cheese
  • 2 tbsp all-purpose flour
  • Salt, to taste
  • ½ cup olive oil, or more if needed

Directions:

Step 1

After washing and cleaning the potatoes, cut them into wedges, then transfer them to a large bowl filled with water, and let it sit for a few minutes to remove all of the excess starch. Pour out all of the water, then rinse the potatoes under cold water, and fill up the bowl again leaving the potatoes to sit for a few minutes while preparing the seasoning. In a large mixing bowl, add the onion powder, garlic powder, Italian seasoning, pepper, chili powder, smoked paprika, breadcrumbs, parmesan cheese, and all-purpose flour, then give them a good whisk until well combined and incorporated, and then whisk in the olive oil until uniform and fully combined.

Step 2

Drain the water off of the potatoes, then pat them dry with a kitchen towel, and transfer them to the bowl of the seasoning mixture before giving them a good toss. Sprinkle some salt to taste while mixing continuously, then line a baking sheet with aluminum foil, and spray it with a generous amount of nonstick cooking spray. Lay the seasoned potatoes on the prepared baking sheet in a single layer, then place them in a preheated oven, and let them bake at 400ºF for about 40 to 50 minutes or until crispy and golden brown. Once done baking, garnish with chopped parsley, then serve with your favorite dipping sauce, and enjoy!
