Start by pounding the two chicken breasts to flatten the thicker side. Next, dry brine them with salt and pepper on both sides. Set aside and leave them for 30 minutes. Next, mince five to six cloves of garlic, finely chop one medium onion, and crush two cloves of garlic. Add 1 tbsp of oil and 1 tbsp of butter to the pan. When the butter melts, add the crushed cloves of garlic and let it infuse into the oil. After this, add the chicken and sear them on both sides until cooked through. (You can add more oil if the pan gets too dry.) After cooking, set them aside for later.

Remove the garlic cloves from the pan and add another 1 tbsp of butter. Saute the onion until translucent, then add the minced garlic and continue sauteing for 10 to 15 seconds. Add 1/2 cup of water or chicken stock and 1 tsp of lime juice and mix. Next, add 1 tsp dried oregano and 1 tsp dried parsley and continue to mix. Simmer until onions are soft and liquid has reduced, then pour 1/2 cup heavy cream. Mix well until well combined. (Add a pinch of freshly grated nutmeg if available.) Simmer until the sauce reaches your desired consistency. When the sauce is ready, add the chicken and simmer for a minute.
