Step 1
Preheat your oven to 400°F, then prick the potatoes all over with a sharp knife or fork, and place them on a baking sheet lined with parchment paper. Place them in the preheated oven to bake for about 1 hour, then let them cool down, and peel off the skin.
Step 2
Chop them into small chunks, then add them to a large bowl, and set them aside to cool for about 15 minutes. In a small bowl, add the mayonnaise, Greek yogurt, apple cider vinegar, salt, and black pepper, then give them a good mix until uniform and combined, and add the mixture to the potatoes.
Step 3
Stir them until well coated, then add the bacon, cheese, and green onions making sure to reserve some for topping, and then stir everything until well combined. Transfer the salad to a serving bowl, then garnish with the reserved bacon, cheese, and green onions, and serve. Enjoy!
