Step 1
Brush the inside of the pan with softened butter, then dust it with flour, and shake off all the excess before setting it aside. Put the cranberries in a small bowl, then add some flour, and give them a good toss until covered. In a separate large mixing bowl, add the granulated sugar, then zest over the lemon, and mix them together until combined. Add the eggs, then beat them together with an electric hand mixer until light and fluffy, add the vegetable oil, and continue to beat until incorporated and combined.

Step 2
Now, add the orange juice, then beat them together to combine, then sift together the remaining cake flour along with the baking powder and salt all over the mixture, and then fold them all together until well combined. Switch to using an electric hand mixer over low speed to combine, then add the cranberries, and then fold them together until incorporated. Pour the batter into the prepared bundt pan, then put it in the preheated oven at 170°C or 338°F, and allow it to bake for about 30 to 35 minutes or until a toothpick inserted at the center comes out clean. Once done baking, remove the cake from the oven, then allow it to cool down, and unmold. Serve and enjoy!
