Ingredients:

  • 1 lb of lean ground beef
  • 3 cloves of garlic (chopped)
  • 1/2 small chopped onion
  • 1 can (400ml) of baked beans (or beans in molasses)
  • 340 ml can of peaches and cream canned corn (or any corn of your choice)
  • 1/2 cup of bbq sauce
  • salt and pepper (to taste)
  • 1 box (320g) of Bisquick combined with 3/4 cup of milk
  • 1/2 cup of grated cheddar cheese
  • 1 – 2 tsp of dried parsley (for garnish)

Directions:

Step 1

Preheat the oven to 425 degrees F. Next, add the ground beef to a large pan over medium heat. Fry the ground beef until cooked. After this, add the minced garlic and chopped onions.  Saute for a couple of minutes. After sauteing, add in a can of baked beans, half a can of peaches and cream corn, and half a cup of bbq sauce. Season with some salt and pepper to taste. Mix everything well to combine over medium-high heat. After everything is heated through, turn off the heat and transfer the meat mixture to the casserole dish.

Step 2

In a large bowl, add 1 box of Bisquick with 3/4 cup of milk. Stir it until a dough forms. Take an ice cream scoop and scoop out some of the dough and put it over the top of the meat mixture in the casserole. (You can simply use two spoons if you don’t have an ice cream scooper.) Place it in the preheated oven of 425 degrees F and bake for about 20 – 22 minutes. After 20 minutes, pull it out of the oven and sprinkle half a cup of grated cheddar cheese over and garnish it with some dried parsley.
