One of the best treats that has been a favorite of mine recently is edible cookie dough. I enjoy making them in different flavors and variations, and they are so convenient because they’re so quick to prepare.

But, there’s another pastry that I love baking for dessert, snack, or even breakfast, and that is this cookie dough cheesecake by Delish on YouTube! This is a very delicious treat that has layers of goodness and I’m sure that any beginner can look like an expert baker when they try this.

Step 1
Preheat your oven to 350°F, then wrap a 9-inch springform pan with aluminum foil on the sides, and press the cookie dough down the bottom spreading it evenly. Beat the cream cheese in a large bowl over medium speed for about 3 to 4 minutes or until smooth, then add the sugar and salt, and continue to beat for another 3 to 4 minutes until fluffy.
Step 2
Add the vanilla, then beat for another 30 seconds, add the eggs one at a time, and beat well in between each addition. Add the sour cream and heavy cream, then keep mixing over low speed until incorporated, and pour 1/3 of the mixture over the cookie dough spreading it evenly. Sprinkle 1/3 of the chocolate chips, then another 1/3 of the batter followed, and repeat the layers 2 more times.
Step 3
Place the cheesecake on top of a roasting pan, then pour boiling water halfway up the sides, and set it on the middle rack of the preheated oven. Allow it to bake for about 1 hour and 30 minutes or until the top is starting to brown and crack, then turn off the oven, and open the door of the oven leaving the cheesecake to slowly cool inside for about 1 hour.
Step 4
Remove the roasting pan from the oven, then carefully lift the springform pan, and remove the foil. Place the cheesecake on a wire rack, then let it cool completely, and then loosely cover it with plastic wrap before transferring it to the refrigerator. Allow it to chill for at least 4 hours or overnight, then when ready to serve, unmold from the pan, and prepare the frosting.
Step 5
For the frosting, beat together the cream cheese, butter, powdered sugar, brown sugar, and vanilla until smooth and combined, then season them with salt, add the mini chocolate chips, and fold until evenly distributed. Dollop the frosting on top of the cheesecake, then top each frosting with half a cookie, and cover the sides of the cheesecake with crushed cookies. Serve and enjoy!
