Ingredients:

Cake Batter

  • 1 ¾ cups of all-purpose flour
  • 1 ¾ cups of granulated white sugar
  • 1 tsp of baking soda
  • ½ tsp of salt
  • 2 large eggs, room temperature
  • ½ cup of buttermilk, room temperature
  • 1½ tsp of pure vanilla extract
  • ½ cup of unsalted butter, room temperature
  • ½ cup of unsweetened natural cocoa powder
  • ½ cup of flavorless oil
  • 1 cup of Coca-Cola

Chocolate Frosting

  • 3 cups of confectioners sugar, sifted
  • ½ cup of unsalted butter, room temperature
  • ¼ cup of unsweetened cocoa powder
  • 1/3 cup of Coca-Cola or milk
  • 1 ½ tsp of pure vanilla extract
  • ¾ cup of toasted pecans, coarsely chopped

Directions:

Step 1

In a large mixing bowl, combine the flour, sugar, baking soda, and salt, give it a good whisk, and set aside. Then, in a separate mixing bowl, add in the eggs, buttermilk, and vanilla extract, then whisk until well combined and set aside. Place a saucepan on a stove over medium heat, add and melt the butter. Whisk in the cocoa powder, oil, and Coca-Cola, let it boil then remove from heat. Let it cool for about 5 minutes before pouring it into the dry ingredients, then whisk them together until fully combined. Add the egg mixture into the batter and whisk until well combined. Pour the batter into a greased pan and bake it in a preheated oven at 350°F (180°C) for about 28 to 30 minutes or until the top is firm, then insert a toothpick into the center of the cake, when it comes out clean then your cake is done. Remove from the oven and place on a wire rack to cool while you make the frosting.

Step 2

Put the confectioner’s sugar in a large bowl, then set it aside. Then, place a saucepan on a stove over medium heat, add in and melt the butter. Whisk in the cocoa powder and Coca-Cola or milk and bring it to a boil. Remove from heat, then slowly add it to the confectioner’s sugar while consistently whisking, add in the vanilla extract as well, then whisk together until smooth. Slowly pour the warm frosting over the warm chocolate cake, then sprinkle the top with the chopped pecans, and let it cool completely.
