Drinking a cold glass of Coke is a perfect way to quench your thirst, but have you tried a cake version of this yet? When I first heard about this recipe, I might be just as surprised and curious as you, it sounds interesting and yummy to me, so I went and gave it a try, and it did not disappoint! Step 1
Preheat your oven to 350°F, then grease a 9×13-inch baking pan or dish with nonstick cooking spray, and set it aside. In a large mixing bowl, add the flour, sugar, baking soda, and salt, and whisk them all together until well combined. Place a saucepan on a stove over medium heat, then add in the butter, Coke, and cocoa powder, and bring them to a boil while whisking continuously. Turn off the heat, then remove it from the stove, add in the eggs and buttermilk, and give them a good whisk until combined.

Add the flour mixture, then continue to mix them all until well combined and incorporated, and then pour the batter into the prepared baking dish or pan. Place it in the preheated oven, then allow it to bake for about 30 minutes or until a toothpick inserted at the center comes out clean. While waiting for the cake to bake, prepare the glaze. Place a medium saucepan on a stove over medium heat, then pour in the Coke, and bring it to a boil.

Continue to boil for about 15 minutes or until reduced by half, then add the butter, cocoa powder, vanilla, and salt, and stir them all together until well combined. Add in the powdered sugar, then continue to whisk them together until combined and incorporated, and pour it over the cake while still warm. Allow it to sit for about 10 minutes or until the icing is completely set, then serve, and enjoy!
