Dealing with leftovers from your parties the previous night is kind of difficult, especially if you have someone in the family who is a picky eater or simply tired of eating the same dishes as the previous event. That’s why I learned to be creative and to improvise, so whenever a holiday or a party is about to happen, as I plan the menu, I also plan what I can do with them if ever they have leftovers. One of my favorite go-to recipes is this one by Kerry Whelpdale on YouTube which recreates the dishes into a totally different dish that still tastes absolutely delicious.

Frittata
Melt the butter in a pan, then fry all of the veggies making sure they are chopped into bite-size pieces and add the pigs in blankets. Give them a good stir, then pour the eggs all over the veggies and pork, and leave it to cook over low heat. Break the cheese into chunks, then spread it all over the egg, and add the herbs as well. After 5 minutes and once cooked through, put it inside the oven under the grills, then let it bake for about 3 to 5 minutes until the top is nice and crispy. Serve and enjoy!

Cauliflower Soup
Add the oil to the pot, then add the onion and garlic, and saute them for a few seconds before adding the stock, cream, thyme, salt, pepper, and cheese. Stir them all together, then let them boil for about 10 minutes until the onion is nice and soft, and let the sauce reduce for about 5 minutes. Once done simmering, emulsify the soup until smooth, then crumble the stilton over the top, serve, and enjoy!
Turkey Pie
Melt the butter in a pan, then saute the onion for a couple of minutes, add the diced mushrooms, and let them cook through until the moisture evaporated a little. Add the leftover turkey, creme fraiche, veggies, salt, pepper, tarragon, and stock, then bring them to a simmer for a couple of minutes and transfer to a baking dish. Cover the dish with puff pastry, then brush the top with milk, and let it bake at 190°C or 375°F for about 25 minutes.
