Step 1
In the bowl of a stand mixer, add the softened butter, powdered sugar, and salt, then beat everything together until smooth and combined, and add a whole egg and a yolk. Continue mixing until nice and smooth, then scrape the sides of the bowl, and keep mixing for a few more seconds.
Step 2
In another bowl, sift together the cake flour and almond flour, then gradually add them into the wet mixture in batches, and beat well in between each addition until incorporated. Set aside 2/3 of the dough, then divide the remaining into 3, and add food coloring to each one.

Prepare the shapes of the Christmas tree, present box, and reindeer as demonstrated in the video, then wrap each shape into the reserved dough, and smoothen them out into a log. Wrap them with parchment paper, then put them in the freezer, and allow them to chill until completely set.
Step 4
Once ready, prepare the egg wash and brush the logs with it until completely coated, and roll them over sprinkles until covered. Slice them into round pieces evenly, then put them on a baking sheet lined with parchment paper, and make sure to add enough in between each piece evenly.
Step 5
Finish decorating each cookie and adding the details, then place them in the preheated oven at 350°F, and allow them to bake for about 7 minutes. Turn the temperature down to 330°F and allow them to bake for another 5 to 7 more minutes or until the edge is slightly toasted. Serve and enjoy!
