Ingredients for Chocolate Mud Pie:
Crust
25 Oreo cookies
¼ cup of unsalted butter, melted
Brownie
½ cup of unsalted butter, cubed
2 oz of bittersweet chocolate, chopped
2 large eggs
⅓ cup of granulated sugar
2 tbsp of unsweetened cocoa powder
½ tsp of vanilla extract
⅛ tsp of salt
2 tbsp of all-purpose flour
Pudding
1½ cups of whole milk
¾ cup of granulated sugar
2 tbsp of cornstarch
¼ tsp of salt
2 large egg yolks
3½ oz of bittersweet chocolate, finely chopped
2 tbsp of unsalted butter, cubed
1 tsp of vanilla extract
Topping
1½ cups of heavy cream
3 tbsp of granulated sugar
Garnish
Chocolate shavings
Chopped pecans
Cookie crumbs
How to Make Chocolate Mud Pie:

Crust
Preheat your oven to 350°F, then add the cookies to a food processor, and crush them until fine crumbs. Transfer the cookie crumbs to a small bowl, then add the melted butter, and combine them until uniform.
Put the crumb mixture into the bottom of a 9-inch deep pie plate, then firmly press down the bottom and up the sides, and bake it in the preheated oven for about 10 minutes. Let the crust cool down while preparing the brownie layer.
Brownie
Melt the butter and chocolate in the microwave at 30-second intervals for about 2 minutes until melted, then in a separate bowl, whisk together the eggs and sugar for about 30 seconds until combined, and then add in the melted chocolate mixture.
Give them a good whisk until incorporated, then add the cocoa powder, vanilla extract, and salt, then keep whisking until combined, add the flour, and fold it in until smooth and combined, add the flour, and fold it in until smooth and combined. Pour the batter over the crust, then bake for about 20 minutes or until puffed, and let it cool on a wire rack.
Pudding Layer
Whisk the eggs in a small heat-proof bowl and set them aside, then place a medium saucepan on a stove over medium-high heat, and add in the sugar, cornstarch, and salt.
Whisk them together until combined, then slowly pour in the milk while whisking continuously, and cook it for about 5 minutes or until thickened.
Turn off the heat, then slowly pour half a cup of the hot milk mixture into the beaten yolks, and then pour it back into the saucepan giving them a good whisk to combine.
Continue to cook them over medium heat while stirring constantly for about 2 to 3 minutes or until thickened and bubbly, then remove from the heat, and stir in the chocolate, butter, and vanilla extract until fully melted and combined.
Pour the pudding over the brownie layer, then let it cool at room temperature for about 20 minutes, and then transfer it to the refrigerator uncovered to chill for at least 4 hours up to overnight.
Serving
In a large mixing bowl, beat together the cream and sugar over high speed for about 2 minutes until soft peaks form. Spread this whipped cream on top of the pie, then garnish with chocolate shavings, pecans, or cookie crumbs, and serve. Enjoy!
