Mint Filling
Chocolate Cookie Dough
Step 1
For the mint filling, add the butter and sugar to a mixing bowl, then beat them until smooth and creamy, and add the cream cheese and mint extract. Give them a good mix to combine, then divide the filling into 13 portions, and place them on a baking sheet or tray lined with parchment paper making sure to space them evenly.
Step 2
Place them in the freezer, then allow them to freeze for at least 30 minutes or until hard and completely frozen, and while waiting prepare the cookie dough. In a large mixing bowl, add the butter, brown sugar, white sugar, salt, and vanilla extract, then beat them until smooth and combined, add the egg, and continue to beat until incorporated.

Sift together the flour, cocoa powder, and baking soda in a mixing bowl, then give them a good mix, and gently add it to the butter mixture in 3 additions making sure to fold well in between each addition. Once almost combined, add the chocolate chips, then mix just about until the dough is soft, and cover the bowl with plastic wrap. Put it in the refrigerator and allow it to chill for about 30 minutes.
Step 4
When ready, scoop out the dough with a 2-inch ice cream scooper, then flatten it in your palm before placing a frozen mint ball in the center, and fold in the edges shaping it into a smooth ball. Continue to fill and shape the remaining dough, then place the stuffed cookie dough balls on a baking sheet lined with parchment paper, and space them at least 2 inches apart.
Step 5
Put them in a preheated oven, then allow them to bake at 350°F for around 8 to 10 minutes, then remove them from the oven, and gently press down some more chocolate chips on top while still warm. Allow them to cool down completely, then serve, and enjoy!
