Frosting
Step 1
Place a large saucepan on a stove over medium-high heat, then add the milk, and bring it to a boil. Remove it from the heat, then add the cocoa powder while whisking consistently, and let the mixture cool down. After a few minutes, add the sugar, molasses, oil, sour cream, vanilla, and eggs, then give them a whisk until combined, and then add the flour, baking soda, baking powder, salt, and chopped chocolate.
Step 2
Whisk everything until evenly combined, then pour the batter evenly into 2 cake pans greased with nonstick cooking spray and lined with parchment paper at the bottom. Place them in a preheated oven and allow them to bake at 350°F for about 40 minutes or until a toothpick inserted at the center comes out clean.
Step 3
Remove the cakes from the oven, then place them on the counter, and allow them to cool thoroughly before unmolding. In a large mixing bowl, add the egg whites, cornstarch, and cream of tartar, then beat them until soft peaks form, and set the mixture aside. Get a small saucepan, then add in the water, sugar, and corn syrup, and give them a good mix to combine.
Step 4
Turn on the heat to high, then bring the mixture to a boil until it reaches a temperature of 240-245°F, and slowly pour it into the egg white mixture while beating consistently. Add the vanilla and keep beating to combine, then let the meringue cool for a few minutes, and frost the cake with it. Top with some sprinkles if desired, then serve, and enjoy!
