Ingredients:

  • 1 (9-inch) pie crust, homemade or store-bought, cooked, and cooled

Filling

  • ½ cup of sugar
  • ¼ cup of cornstarch
  • ½ tsp of salt
  • egg yolks
  • 2 cups of milk
  • 1 cup of half and half
  • 1 tsp of vanilla extract
  • 7 ounces of semi-sweet chocolate chips or chunks
  • 2 tbsp of butter

Topping

  • 1 cup of heavy cream, chilled
  • 1 tbsp of sugar
  • 1 tsp of vanilla extract
  • Grated chocolate, for garnish

Directions:

Step 1

Bake the crust and let it cool down, then prepare the filling. Place a medium pot on a stove, then add the sugar, cornstarch, and salt, and whisk them all together until combined. Add in the egg yolks, then continue to whisk until well combined, add the milk and half and half, and then whisk them again until incorporated.

Step 2

Whisk in the vanilla, then turn on the heat to medium, and bring the mixture to a boil while whisking continuously. Once it boils, turn the heat to low, then let it simmer, and cook for about 1 to 2 minutes while still whisking around. Add the chocolate and butter, then whisk them in until melted and smooth, and turn off the heat.

Step 3

Pour the filling into the prepared pie crust, then smooth the top out, and cover the surface with a well-greased parchment paper pressing it right on. Place it in the refrigerator, then let it chill for at least 4 to 8 hours up to overnight or until thoroughly and completely set.

Step 4

For the topping, beat together the cream, sugar, and vanilla until soft peaks form starting on low speed and increasing to high speed after 1 minute. When ready to serve, spread the topping over the pie, then garnish it with grated chocolate, and serve. Enjoy!
