This soft and buttery loaf cake filled with chocolate chips is an interesting combination of texture and it’s one of the most wonderful pastries you can ever taste. It’s my favorite go-to cake and I always make it for breakfast, snack, and even dessert!

Ganache
Step 1
Preheat your oven to 350°F, then grease a 9×5-inch loaf pan with a nonstick cooking spray, and line it with parchment paper. In a medium-sized mixing bowl, add the flour, baking powder, baking soda, and salt, then whisk them until combined and uniform, and reserve 1 tablespoon for later. In a large mixing bowl, add the butter and sugar, then beat them over medium speed until light and fluffy, add the vanilla and almond extract, and continue to beat to combine.
Step 2
Add the eggs one at a time while beating over low speed consistently, then in a separate bowl, mix the milk and sour cream, and add them to the butter mixture alternately with the flour mixture in 3 batches. Beat them well in between each addition until well incorporated, then in a separate bowl, toss the mini chocolate chips and reserved flour mixture together until well coated, and add them into the batter.
Step 3
Gently fold until evenly distributed, then pour it into the prepared pan, and spread it evenly smoothing the top nicely. Tap it on the surface to reduce the air bubbles, then put the cake batter in the preheated oven, and allow it to bake for about 60 to 65 minutes or until a toothpick inserted at the center comes out with a few dry crumbs. Let it cool on a wire rack for about 10 minutes, then carefully unmold it, and allow it to cool completely.
Step 4
While waiting for the cake to cool prepare the ganache, place the chopped chocolate and salt in a heat-proof bowl, then place a small saucepan on a stove over medium heat, and pour in the heavy cream. Bring it to a simmer until bubbles form at the edges, then pour the hot cream over the chocolate, and cover it. Let it sit for about 1 minute, then give it a good stir until smooth and completely melted, and cover the freshly baked loaf cake with it. Serve and enjoy!
