Mexican dishes are very delicious and they are always guaranteed flavorful and hearty, they are also perfect to share with your family over lunch or dinner and breakfast if you want. One of my favorites to make is a chicken tamale casserole which is super easy and convenient to make.

You can prepare this dish quickly and you don’t even have to make too much effort, just mix everything together as instructed in the recipe and dump it on your casserole or baking dish. Step 1
Add the cornbread mix in a large mixing bowl, then add the cumin, chili powder, and dried oregano to taste, add some garlic powder or onion powder if you want, and then pour in the cream corn.
Step 2
In a separate bowl, mix together the milk and eggs until well combined, then add the mixture to the batter, and add about 1 cup of Mexican blend cheese to the batter.
Step 3
Stir them well until everything is evenly combined, then pour the batter into the bottom of a casserole dish, and place it in a preheated oven at 400°F.
Step 4
Allow it to bake for about 20 minutes or until set, then poke holes all over the cornbread, and pour the enchilada sauce spreading it evenly.
Step 5
Chop the chicken into small bite-sized pieces, then spread them on top of the cornbread, and sprinkle more cheese over them.
Step 6
Put it back in the oven and let it bake for about 15 minutes or more until the cheese has melted and the chicken is cooked through, then serve, and enjoy!
