This chicken taco soup recipe by Kitchen Fun With My 3 Sons on YouTube is already a meal itself and you can make this easily either in your crockpot or stovetop, either way, it’s a very convenient and easy dish to make on a cold night.

True to its name, this soup is rich with taco flavors and it’s so delicious that you would surely ask for seconds. What’s also great about this recipe is that you can use leftover ingredients such as rotisserie chicken that you made or bought last night!
Step 1
Place a large pot on a stove over medium heat, then heat the olive oil, and saute the diced onion and red bell pepper. Cook them for about 5 minutes until softened and translucent, then add the minced garlic, give them a good toss, and cook for an additional minute until fragrant.
Step 2
Pour in the chicken broth, then add the diced tomatoes with green chilled, black beans, and corn, and stir everything together until well combined. Season them with chili powder, garlic powder, cumin, smoked paprika, oregano, salt, and pepper, then give them a good mix, and adjust the seasoning to taste if needed.
Step 3
Bring it to a simmer, then add the shredded chicken, and mix them thoroughly until fully combined. Add the sour cream, then stir it well until incorporated, and allow it to gently simmer for about 20 minutes while stirring occasionally. Serve hot with your favorite toppings and enjoy!
