Ingredients:
- 2.5 to 3 cups of long-grain rice (cooked and refrigerated the day before)
- 1.2 to 2 lbs of boneless skinless chicken thighs or breast (trimmed and cut into bite-sized pieces)
- 3 large eggs (lightly scrambled)
- 3 tablespoons of butter
- 2 cups of mixed frozen veggies – corn, peas, and carrots
- 1 small white onion (chopped or diced) – optional
- 1 tablespoon of minced garlic
- 5 green onions (chopped)
- 2 teaspoons of sesame oil
- 1 tablespoon of oyster sauce
- 1/4 cup of soy sauce (or more to taste)
- salt and pepper to taste

Instructions:
Step 1:
Drizzle olive oil in a pan and add the chicken. Season with salt and pepper and fry over medium-high heat until cooked halfway through. Add a little soy sauce and continue cooking until done. Transfer to a plate lined with a paper towel.

Step 2:
Heat a wok over medium-high heat. Add 1 tablespoon of butter and a little bit of oil. Once it’s melted, add the beaten egg and let it set first, move it around, then break it into pieces. Transfer to a plate and set aside.
Step 3:
Wipe your wok, and add olive oil and 2 tablespoons of butter. Add the veggies and cook for a few minutes. Then add the garlic and green onion and cook until fragrant.
Step 4:
Add the egg, chicken, sesame seed oil, and rice. Mix until well combined.

Add the oyster sauce and the remaining soy sauce. Taste and adjust seasonings if needed.
Step 6:
Turn off the heat and serve in individual plates or bowls. Enjoy!
