Step 1

Grate the potatoes and put them in a strainer, then rinse them with water, and squeeze out all the excess water. Transfer the potatoes to a bowl, then add the chopped onion, bell peppers, parsley, eggs, salt, paprika, pepper, and flour, and mix everything together until fully combined. Grease the baking sheet with oil and line it with parchment paper, then spread out the potato mixture evenly, and bake it in an oven preheated at 180°C or 356°F for about 25 minutes.

Step 2

Place a pan on a stove over medium-high heat, then heat the oil, and saute the chopped onion until translucent. Add the chopped chicken, then fry them until nice and brown, and then add the chopped mushrooms, bell peppers, and minced garlic. Keep cooking them until softened, then season them with salt and pepper, add the cheddar cheese, and give them a good mix.

Step 3

Once melted, turn off the heat, then cut the baked potato sheet into squares, and put the chicken filling on one side pf each square. Roll them over, then transfer them to a baking sheet greased with oil and lined with parchment paper, and make sure to space them evenly. Sprinkle some mozzarella cheese on top followed by chopped parsley, then let them bake for about 20 minutes, and serve. Enjoy!
