We can all agree that the chicken sandwich is one of the best sandwich versions ever and I always make sure to order this whenever we eat at one of my favorite restaurants. Recently, I discovered this copycat recipe by Smokin’ & Grillin with AB on YouTube and I immediately went to try it at home. The result did not disappoint because it taste just as good as the original, I might even want to make this every day because it’s that delicious. You should see it for yourself, too, and you’ll love it just as much as I did for sure.

Step 1
Slice the chicken through in half as shown in the video, then place them in a Ziploc bag along with the dill pickle juice making sure they are nicely covered, and seal the bag before placing it inside the refrigerator. Allow the chicken to marinate in the juice for at least 30 minutes while preparing the rest of the ingredients. In a small mixing bowl, add the mayonnaise, Dijon and yellow mustard, BBQ sauce, honey, garlic powder, paprika, and lemon juice, then whisk them all together until uniform and well combined, and then set it aside in the fridge as well while preparing the batter and breading.

Step 2
In a separate bowl, add the all-purpose flour, salt, pepper, powdered sugar, cayenne pepper, chili powder, and paprika, then give them a good whisk to combine, and set it aside. In another bowl, mix together the milk and egg until incorporated and well combined, then once the chicken breast is done marinating, dip each piece into the egg batter, and coat it with the flour mixture making sure to give it a nice press. Repeat the process one more time and make sure to double-dip each chicken piece.
Step 3
Once ready, deep fry them until both sides are nice and crispy or the internal temperature reaches at least 163 degrees, and then place the cooked chicken in a wire cooling rack with a baking sheet or tray underneath to catch any drippings. While the cooked chicken is still hot, add a slice of cheese on top and allow it to melt, then spread some sauce on a bun, and assemble the pickles, lettuce, tomato slices, and chicken with cheese in that order. Spread more sauce on another bun, then place it on top of the chicken with its sauce side down, and serve. Enjoy!
