I love cookies and brownies and they have been my recent favorites, I kept ordering them at cafes, and I always find myself craving them. Since I eat them often, I thought why not just try and bake them at home, that way I can save money and I can have as much serving as I want.

Like I always do when I need a recipe, I browsed the internet for ideas and video tutorials that are very easy to follow, and that’s when I found Divas Can Cook‘s chewy brownie cookies on YouTube. It’s a fusion of my favorite pastries, so I immediately went to give it a try, and it turned out to be one of the best things I ever baked!
Step 1
Add the butter and dark chocolate chips in a microwave-safe bowl, then heat them until melted, and stir until smooth. Set it aside and let it cool, then in a separate large bowl, beat the sugar, brown sugar, eggs, vanilla extract, and coffee extract over medium speed for about 5 minutes until pale and airy. Add in the melted melted chocolate, then give them a good mix, and set them aside.
Step 2
In another bowl, whisk together flour, cocoa powder, baking powder, and salt until uniform, then add the dry mixture to the wet mixture, and stir them until combined. Place the dough in the refrigerator, then let it chill for about 20 minutes until firm, and when ready, preheat your oven to 350°F. Get the dough out of the refrigerator, then scoop 2 tablespoons from it, and shape it into a ball.
Step 3
Place the cookie ball on a baking sheet lined with parchment paper, then shape the remaining dough, and make sure to space them about 2 inches apart evenly. Place them in the preheated oven, then let them bake for about 14 to 16 minutes, then remove them from the oven, and let the cookies cool for about 2 to 3 minutes. Carefully remove them from the pan, then transfer them to a wire rack to finish cooling, and serve. Enjoy!
