Step 1
Preheat your oven to 400°F, then grease a 9×13-inch baking dish with a nonstick cooking spray, and set it aside. Wash and peel the potatoes, then slice them into ¼-inch slices, and arrange half portion on the bottom of the prepared baking dish.
Step 2
Place a large skillet or saucepan on a stove over medium heat, then melt the butter, and add the sliced onions. Saute them until soft and translucent, then add the flour, salt, and black pepper, and continue to cook for an additional 1 to 2 minutes.
Step 3
Pour in the heavy cream, then whisk them to combine, and bring the mixture to a simmer cooking it until smooth and thickened. Reduce the heat to low, then add the cheddar cheese, and give them a good stir until melted and combined.
Step 4
Pour half of the cheese sauce over the potatoes on the baking dish, then arrange the remaining half of the potatoes on top, and pour the cheese sauce evenly. Cover the baking dish with aluminum foil, then place it in the preheated oven, and let it bake for about 90 minutes or until the potatoes are tender.
Step 5
Once done baking, remove the foil from the dish, then set your oven to broil, and broil the potatoes uncovered for about 5 to 10 minutes or until golden brown. Let it cool for about 10 minutes, then garnish with freshly chopped green onions, and serve. Enjoy!
