Ingredients:

  • 3 lb desiree potatoes, finely sliced
  • 2.5 oz bacon, roughly chopped
  • 1 large clove of garlic, crushed
  • 3 large green onions, sliced
  • 1/4 cup butter
  • 1/4 cup plain all-purpose flour
  • 1/2 cup chicken stock
  • 1 & 1/4 cups whole milk
  • 1 cup heavy cream
  • 1 tbsp fresh thyme leaves, discard stems
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 2 cups lightly packed grated cheddar

Directions:

Step 1

Place the finely sliced potatoes in a pot with water and bring them to a boil. Drain and set aside. Next, fry the chopped bacon in a pan, and once it turned brown, add the sliced green onion, minced garlic, and butter. Saute and melt the butter, then add the flour. Cook and stir for 30 seconds. After 30 seconds, add the chicken stock, whole milk, and heavy cream. Mix well. After this, add the thyme, salt, ground pepper, and cheese. Stir until it starts to thicken.

Step 2

To start assembling the casserole, pour about 3/4 cup of sauce into the base and spread, then begin assembling the casserole. Layer 1/3 of each in this order: boiled potatoes, sauce, and grated cheese. Do this layer twice, then place the casserole dish in a 350 degrees F oven and bake for 45 to 50 minutes.
