Ingredients for Cheesy Mexican Casserole:

  • 1.5 pounds of ground beef
  • Chopped onion
  • Black pepper, to taste
  • Garlic powder, to taste
  • Adobo seasoning, to taste
  • 1 jar of fire-roasted salsa
  • 1 can of Rotel diced tomatoes and chopped green chilies
  • 1 can of cream of mushroom
  • ¼ cup of chicken broth
  • Frozen corn and peas
  • Pasta, uncooked
  • Colby Jack cheese, shredded
  • Pepper Jack cheese, shredded

How to Make Cheesy Mexican Casserole:

Step 1

Place a pan on a stove over medium-high heat, then add the ground beef, break it apart, and in the chopped onions. Give them a good mix and cook until nicely browned, then season them with adobo seasoning, black pepper, and garlic powder to taste, and stir them until evenly combined. Taste and adjust the flavor, then drain off the grease, and add in the salad, canned diced tomatoes, and cream of mushroom.

Step 2

Pour in the chicken broth, then add in the frozen corn and peas, and mix everything until combined. Let them cook for a few more minutes, then while waiting, cook the pasta in a pot of boiling salted water according to the package instructions, and once done, drain off all the water.

Step 3

Add the cooked pasta to the meat followed by the Colby jack cheese, then turn off the heat and mix them until evenly combined, and transfer them to a baking dish. Spread them evenly, then sprinkle the pepper jack cheese on top, and bake them in a preheated oven at 350°F for about 30 to 35 minutes. Serve and enjoy!
