I love cheese, so when I discovered this cheese souffle recipe from Home Cooking Adventure on Youtube, I immediately tried it. And no mistake, this dessert tastes like heaven, and it feels like it melts in your mouth! I can’t get enough of the cheesiness and fluffiness! Ingredients:

  • 3 tbsp butter
  • 1/3 cup flour
  • 1 cup milk
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp paprika
  • freshly ground black pepper
  • 4 large eggs
  • 1/2 cup Swiss cheese, grated
  • 1/2 cup cheddar cheese, grated
  • 1/4 cup parmesan cheese, grated

Topping:

  • grated parmesan cheese (optional)
  • butter and breadcrumbs (for coating the ramekins)

Directions:

Step 1

Preheat the oven to 375 degrees F with a baking sheet inside, separate the egg whites from the yolks, then grease the ramekins with softened butter and coat them with fine breadcrumbs. Set aside. Next, melt 3 tbsp butter in a saucepan over medium heat. Once the butter is fully melted, add 1/3 cup of flour and cook for one to two minutes. After this, gradually add 1 cup of milk while whisking constantly. Bring the mixture to a boil, then cook for another two to three minutes until thickened. Remove from heat and stir in 1/2 cup of Swiss cheese, 1/2 cup cheddar cheese, and 1/4 cup of parmesan cheese. Season with 1/2 tsp salt, 1/4 tsp paprika, and 1 tsp Dijon mustard. Mix well, then add the egg yolks one at a time.

Step 2

Once fully combined, transfer the mixture to a large bowl and let it cool slightly. Sprinkle some freshly ground black pepper and mix. Set aside. Next, add a pinch of salt to the egg whites and whip until soft peaks. After this, gradually fold it into the cheese mixture, then divide it evenly into the prepared ramekins. Top it with some grated parmesan (optional). Place the ramekins on the preheated baking sheet, then into the oven. Bake at 375 degrees F for 25 to 30 minutes or until puffed and golden. Serve immediately.
