Ingredients:

  • 2 tbsp of extra virgin olive oil
  • 1 pound of medium shrimp, thawed (if frozen), peeled, and deveined
  • 3 cloves of garlic, minced
  • Kosher salt
  • Freshly ground black pepper
  • (8-ounce) block of cream cheese, softened
  • ¼ cup of mayonnaise
  • ¾ cup of shredded mozzarella cheese
  • ¼ cup of grated parmesan cheese
  • lemon, juiced and zested
  • 2 tbsp of freshly chopped parsley, plus more for garnish
  • Pita chips, for serving

Directions:

Step 1

Preheat the oven to 350°F. Place a large skillet on a stove over medium heat, then add the oil, and let it heat up before adding the shrimp. Add the minced garlic, then season them with salt and pepper, and cook them for about 3 to 4 minutes or until the shrimp is pink on both sides. Turn off the heat, then let the shrimp cool slightly, drain, and coarsely chop them.

Step 2

In a large mixing bowl, add the cream cheese, mayonnaise, mozzarella, parmesan, lemon juice, lemon zest, parsley, and chopped shrimp, then season them with salt and pepper, and stir them all together until well combined. Transfer them dip to a small baking dish, then place them in the preheated oven, and allow them to bake for about 25 minutes or until golden and bubbly. Garnish with parsley, then serve with pita chips, and enjoy!
