These cheesy cupcakes are not only perfect for snacks or desserts, but you can enjoy them for dinner, too! Pair them with any of your favorite beverages and I guarantee you that this will be your new favorite pastry. Step 1
Preheat your oven to 350°F, then line a muffin pan with cupcake liners, and set it aside. In a medium-sized bowl, add the flour, baking powder, and salt, then whisk them to combine, and set them aside.
Step 2
In a large mixing bowl, add the butter, sugar, and eggs, then beat them until combined, and then add the flour mixture in 3 batches alternating it with the sweetened condensed milk making sure to beat well in between each addition over low speed.
Step 3
Add the quick-melt cheese, then give them a good stir until well incorporated, and scoop them evenly onto each muffin pan cup about ¾ full. Top them each with cheddar cheese, then place them in the preheated oven.
Step 4
Let them bake for about 20 to 25 minutes or until a toothpick inserted at the center comes out clean and the top is golden. Once done baking, remove them from the oven, then allow them to cool, and serve. Enjoy!
