But, one of my go-to when comes to snacks is a Sicilian sausage roll which true to its name is a bread roll filled with sausage. It’s a simple pastry that is incredibly tasty and is filled with lots of cheese, too.

Ingredients for Sicilian Sausage Rolls:

  • 24 ounces pizza dough
  • 1 large egg, beaten
  • 2 cups ricotta cheese
  • 12 ounces Italian sausage, casing removed
  • 1 tsp freshly ground black pepper
  • 1 tsp red chili flakes, or to taste
  • Salt, to taste
  • ½ cup green onions, thinly sliced
  • ½ cup pecorino Romano cheese, plus more

How to Make Sicilian Sausage Rolls:

Step 1

Preheat your oven to 400°F, then line a baking sheet with parchment paper, and set it aside for later. Prepare the dough and place it on a floured surface, then roll it into a 12×18-inch rectangle, and brush it all over with half of the beaten egg. Place scoops of ricotta cheese into the dough as shown in the video, then make sure to arrange them into rows, and space them about 1½ inches apart from each other.

Step 2

Put a scoop of sausage in between each portion of ricotta, then season them with black pepper, red chili flakes, and salt to taste, and sprinkle some chopped green onions all over them. Grate over the pecorino Romano cheese, then starting from one long edge, roll over the dough until it becomes a log, then make sure that the seams are on the bottom.

Step 3

Cut the log into 12 equal pieces, then place them on the prepared baking sheet with the cut side facing up, and brush each of their tops with the remaining egg. Grate over more pecorino Romano cheese, then place them in the preheated oven and bake them for about 45 to 50 minutes until nicely browned.
