Nothing is more satisfying than a home-cooked meal after a busy day, but for some, cooking might be a real challenge especially when you’re tired, which could result in ordering or eating outside. However, it’s not as fulfilling as a warm meal in the comfort of your home. Those days are now over with these easy casserole ideas, you can prepare these meals ahead of time and bake them in the oven whenever you’re ready, wait for it to cook, and then start eating. Ingredients:

Chicken Broccoli Casserole

  • 2 bunches Broccoli
  • 6 boneless, skinless chicken breasts
  • 20.10 ounces Cream of chicken soup
  • 1 cup Mayonnaise
  • 1 tsp Lemon juice
  • ½ tsp Curry powder
  • 1 cup Cheddar cheese, shredded
  •  slices Bread
  • 1 tbsp Butter, melted

Enchilada Casserole

  • 1 pound Lean ground beef
  • 15 ounces Enchilada sauce
  • 1 cup Mexican cheese blend, shredded
  • 8 Corn tortillas (6 inches)
  • 15 ounces Black beans, rinsed and drained

Chicken and Rice Casserole

  • 2 tbsp Butter, unsalted
  • 1 Onion, diced
  • ½ tsp Thyme, dried
  • 2 tsp salt
  •  cups Long grain white rice, uncooked
  • 1  clove Garlic, minced
  • 2 cups Chicken broth
  •  cup Milk
  • Ground pepper to taste
  • 3 cups Cooked and shredded chicken
  • 2 cups Frozen mixed vegetables
  •  cups Shredded sharp cheddar cheese

Directions:

Chicken Broccoli Casserole

Cut the chicken into desired pieces then boil, then cut the broccoli into small pieces and steam. Prepare the sauce by combining the cream of chicken soup, mayonnaise, and lemon juice. Transfer the steamed and drained broccoli onto a casserole, add the chicken on top, then pour the sauce mixture and spread evenly until the chicken and broccoli are well coated.  Sprinkle cheese and top with bread dipped in melted butter. Bake at 350° for about 25 to 30 minutes or until the cheese has melted.

Enchilada Casserole

Cook the ground beef on medium-high heat then transfer into a large bowl, add half portion of the enchilada sauce and cheese, then mix it until well-combined. Grease the casserole with cooking spray, then start layering the tortillas at the bottom, pour half of the meat mixture, and spread evenly. Then add half of the canned beans, drizzle some enchilada sauce to keep the moisture. Add another layer of tortillas, then pour the remaining meat mixture, beans, and cheese. Cover it with a sheet of aluminum foil then bake at 350° for about 30 minutes or until the beef is heated through.

Chicken and Rice Casserole

Place your skillet on medium-high heat and melt the butter. Sauté the onion, thyme leaves, salt, and garlic, then add the rice. Cook it for about 1 minute before adding the chicken broth and milk, bring it to a boil while stirring regularly. Add the chicken and let it boil for another minute, turn the heat to low, cover, and leave it for 15-18 minutes. Mix it before adding the frozen vegetables and cheese, then continue mixing. Sprinkle cheese on top, leave it covered on low or turn off the heat for 5 minutes.
