Grate the carrots over a small bowl, then set them aside. In a separate mixing bowl, mix the brown sugar, salt, and egg yolks together until well combined, then add in the milk, vegetable oil, and vanilla extract, and mix them together until well combined. Sieve the flour, almond powder, baking powder, and cinnamon powder over the mixture, then whisk them together until smooth, and set it aside. In another large bowl, beat the cold egg whites until frothy and large bubbles start to form, gradually incorporate the sugar into 3 divided portions, then whip them until soft peaks form. Scoop out some of the meringue and add it to the dough mixture, then gently fold it in until well combined. Pour the meringue and dough mixture into the bowl of meringue, then fold them together until well combined. Add in the grated carrots and chopped pecans, then continue gently folding them until incorporated. Pour the dough mixture into a mold or a deep sheet pan lined with parchment paper.

Spread it evenly and smoothen out the top, then pop it in a preheated oven at 170 degrees, and let it bake for about 23 minutes. Once done baking, remove it from the pan by lifting the parchment paper, then let the cake cool completely before removing the parchment paper and trimming the edges. In a large mixing bowl, beat the heavy cream and sugar until forthy, then add in the cream cheese and lemon juice, and continue beating them together until creamy. Spread this mixture all over the cake evenly, then roll it up, and wrap it in parchment paper. Place it in the refrigerator and leave it for about 2 hours. While waiting for the cake roll to set, beat the heavy cream and sugar until frothy, then add in the cream cheese and lemon juice, and continue beating them together until creamy. Pipe the cake roll with this mixture until thinly covered, then separate some of it and add a few drops of orange and green food coloring. Pipe in some cute carrots all over the cake roll, then dust it with ground cinnamon and powdered sugar.
