Start by preheating your oven to 300F then lining a large baking sheet with parchment paper.
In a small bowl, add sugar, cinnamon, and salt. Stir to combine.
In a large mixing bowl, add the egg white, water, and vanilla, Whisk until light and foamy for about 1 minute. Next, add the pecans and stir until well-coated.
Sprinkle in the sugar mixture. Stir until pecans are evenly coated with the mixture.
Transfer to the prepared sheet pan. Spread the pecans out evenly in a single layer.
Place the baking sheet in the preheated oven and bake for 20 minutes. After baking, stir the nuts, then continue baking until they smell toasted and fragrant and the coating is dry for about 15 minutes more.
Once done baking, let the pecans cool completely on the pan. As they cool, the sugar will harden. Break up any chunks. Serve the pecans right away or place them in an airtight container for up to 2 weeks.
