Step 1
Bring a pot of water to a boil, then add the pasta along with some salt and chicken bouillon, and cook it for about 10 to 12 minutes or according to the package instructions. Reserve some pasta water, then drain off the excess water, and set the pasta aside.
Step 2
Pat the shrimp dry, then add them to a large mixing bowl, and sprinkle all of the seasonings. Give them a good mix until well coated and set them aside, then place a skillet on a stove over medium-high heat, and drizzle some olive oil about 2 to 3 tablespoons.
Step 3
Once the oil is hot, add the seasoned shrimp, then cook them for about 2 minutes per side or less, and transfer them to a plate before setting aside. In the same skillet, add the butter and let it melt, then add the onion and minced garlic, and saute them until fragrant.
Step 4
Add the tomato paste and give it a good stir, then add half a cup of pasta water gradually, and make sure to stir well until incorporated. Pour in the heavy cream while stirring continuously, then add the spinach, and give them a quick mix.
Step 5
Add some more chicken bouillon and Cajun seasoning, then give them a good mix, adjust the taste with salt and pepper if needed, and add the cooked pasta. Mix them until well coated, then add the shrimp and cheese, and keep mixing to combine. Garnish it with parsley, then serve, and enjoy!
