Ingredients:

  • 1 lb breakfast sausages (removed from their casings)
  • 1 yellow onion (diced)
  • 1 red bell pepper (diced)
  • 8 large eggs
  • 1 cup half-and-half cream
  • 4 cups frozen hash brown potatoes
  • 1 cup cheddar cheese (shredded)
  • 2 green onions (sliced)
  • salt and pepper to taste

Directions:

Step 1

Preheat your oven to 350 degrees F and grease your casserole dish. Next, add the breakfast sausages into a skillet and break them up using a spoon over medium-high heat. Cook them up until they are no longer pink, then add the chopped onion and chopped red bell pepper. Cook until they soften (about 2 to 4 minutes). After this, remove from heat and set aside.

Step 2

Cracked eight eggs into a bowl, then add 1 cup of half-and-half cream. Whisk well to fully combined, then season with some salt and pepper. Now, get your greased casserole dish and start assembling the breakfast casserole. Add 2 cups of frozen hash browns to the bottom, then layer in half of the sausage mixture and 1/2 cup of shredded cheddar cheese. After this, just repeat the layers by adding the rest of the hash browns and sausage mixture, then pour over the egg mixture. Top it with the rest of the shredded cheddar cheese. Get it into the preheated oven and bake for about 45 minutes to an hour. After cooking, garnish it with some chopped green onions.
