Pie Filling
Pie Crust
Step 1
Place a medium-sized saucepan on a stove, then add in the strawberries, blueberries, cane sugar, brown sugar, cornstarch, lemon juice, lemon zest, and vanilla extract, and turn on the heat to medium.
Step 2
Cook them for about 10 minutes while stirring continuously until it thickens, then turn off the heat, and pour the filling into a large dish. Allow it to cool down for about 1 hour or until it reaches room temperature, and proceed to prepare the crust.
Step 3
Preheat your oven to 375°F, then transfer 1 pie crust onto a lightly floured surface, and roll it into a 12-inch circle smoothing out any cracks along the edges. Carefully transfer the pie crust into the pie dish, then firmly press it down the bottom and sides, and pour in the cooled filling spreading it evenly.
Step 4
Place the other pie crust on a lightly floured surface, then roll it into a 12-inch circle, and cut it into twelve 1-inch thick strips. Lay the strips over the pie in a lattice pattern as shown in the video, then brush the milk and egg mixture over the crust, and sprinkle the sugar all over evenly.
Step 5
Place it in the preheated oven, then allow it to bake for about 45 to 55 minutes or until brown and bubbly, and cover the edges of the pie 25 minutes into the cooking time. Once done baking, let it cool for at least 1 hour, then serve, and enjoy!
