Blueberry Filling
Crust
Step 1
In a medium saucepan, add the water and sugar, then stir them together until combined, and place it on a stove over medium heat. Allow it to heat up until it simmers and the sugar has melted, then in a small bowl, whisk together the water and cornstarch until smooth, and add it to the saucepan. Give them a good whisk, then add 1½ cups of blueberries, and continue to heat them up over medium-high heat.
Step 2
After 10 minutes or once the blueberries burst and the liquid has thickened, add in the Jell-O, then stir them together until dissolved, remove it from the heat, and set it aside to cool to room temperature. At this point, preheat your oven to 350°F, then add the Oreos to a blender or food processor, and process them until fine crumbs, or crush them in a Ziploc bag instead.

Step 3
Add in the sugar and melted butter, then stir them together until well combined, and transfer it to a pie pan. Press the crumbs down the bottom nicely and firmly using the bottom of a small glass or the backside of a spoon or with your hands. Place it in the oven, then allow it to bake for about 10 minutes, remove it from the oven once done baking, and set it aside to cool.
Step 4
Once the blueberry filling has cooled, add in the remaining 2 cups of blueberries, then give them a good stir, and pour it into the cooled crust spreading it evenly. Now, place it in the refrigerator, then allow it to chill for at least 4 hours or more until set. Once ready to serve, slice the pie, then garnish it with whipped topping along with some more blueberries or top it with ice cream if desired, and then serve. Enjoy!
