This no-bake dessert recipe by Preppy Kitchen on YouTube is one of the best ways to make icebox pie and it’s so easy to prepare that anyone can do it. This recipe calls for mixed berries, but you can change it to any berry or fruit that you want, and make an icebox pie flavor of your choice.

Step 1: Add the mixed berries, granulated sugar, lemon zest, and lemon juice in a mixing bowl, then mash and mix them well, add the remaining mixed berries, and stir well to coat.
Step 2: Crush the Biscoff in a food processor, then add the brown sugar, sliced almonds, melted unsalted butter, and kosher salt, and keep pulsing until well blended.
Step 3: Transfer the mixture to a pie tin or dish, then spread it to the bottom and sides evenly, and press it firmly. Place it in the freezer and let it freeze for about 15 minutes, then while waiting, prepare the filling.
FILLING
Step 1: In another mixing bowl, add the whole milk ricotta, cream cheese, and lemon zest, then beat them over medium speed until creamy and uniform, add the powdered sugar, and continue beating to combine.
Step 2: Taste and adjust as desired, then keep mixing for a few more minutes until super smooth and set aside. In a separate bowl, beat the whipping cream until soft peaks form, then transfer it to the cream cheese mixture, and fold them in until incorporated.
Step 3: Strain the berries and reserve the juices, then add the berries to the filling mixture, and fold them in nicely. Transfer the filling to the frozen crust, then spread it evenly, and put it back in the freezer to freeze for at least 3 hours or longer.
TOPPING & SERVING
In the bowl of a stand mixer, add the heavy whipping cream, powdered sugar, and vanilla extract, then beat them over high speed until stiff peaks form, and spread it over the filling of the pie. Top it with more berries, then drizzle the reserved juice, and serve. Enjoy!
