We can all agree that cheesecakes are one of the best desserts of all time, but what’s better than cheesecakes is this version that comes in small jars by Healthy World Cuisine (HWC) Magazine on YouTube. You can also prepare them in small cups and serve them to your family or guest, and guaranteed they can finish a whole serving in just one sitting. The steps in preparing this dessert are also very easy to follow so you don’t have to worry about messing it up if it’s your first time.

Ingredients:

Boozy Cherry Compote

  • 2 cups of sweet cherries, fresh
  • ½ cup of water
  • 1½ tbsp of lemon juice or juice of 1/3 lemon
  • 2 tbsp of maple syrup or sweetener of choice, to taste
  • 2-3 tbsp of bourbon or alcohol of choice, to taste, you can add ½ tsp of almond extract instead to make it kid-friendly
  • 1 tsp of cornstarch + 2 tsp of water (slurry)

Graham Cracker Crumble

  • 4 whole graham crackers
  • 3 tbsp of butter

Cheesecake Mousse

  • 1 cup of heavy whipping cream
  • 8 ounces of cream cheese, at room temperature
  • 1 tsp of vanilla
  • 1/3 cup of maple syrup or sweetener of choice, to taste
  • 1 tbsp of lemon zest or zest of 1 lemon

Directions:

Boozy Cherry Compote

  • Wash the cherries well, then cut them in half, and remove the pit. Place them in a saucepan, then add the water, lemon juice, maple syrup, and bourbon or almond extract (for kids), and let them cook over medium heat for about 5 to 10 minutes or until they start breaking down and releasing juices.
  • Mix together the slurry, then add half of it to the cherries, and give them a good mix until thickened, add the rest if needed. Remove the cherries from the heat, then set them aside, and allow them to cool down to room temperature.

Graham Cracker Crumble

  • Place 4 whole cracker sheets on a Ziploc bag, then crush them with a rolling pin until crumbs and transfer them to a large mixing bowl. Add the butter, then stir them together until well combined, and set them aside for later.

Cheesecake Mousse Filling

  • In a large mixing bowl, add the heavy whipping cream, then beat it until stiff peaks form, then in a separate bowl, add the cream cheese, vanilla, maple syrup, and lemon zest, and give them a good mix until smooth and combined.
  • Taste and adjust the sweetness as desired, then add the whipped cream to the cream cheese mixture, and gently fold them together until combined but do not overmix. Transfer the cream cheese filling to a piping bag and set it aside for later.

Assembly

  • Grab a jar or cup, then add a layer of graham cracker crumbs to the bottom, and gently press it down. Next, add a layer of cheesecake filling on top, then drizzle 1 to 2 tablespoons of cherry compote, and repeat the layers until you reach the top or are filled. Add some fresh cherry on top for garnish, then dollop some whipped cream along with some chocolate shavings if desired, and serve immediately or chilled. Enjoy!
