Have ramen at home? Turn it into this delicious beef and broccoli ramen stir fry! I was blown away by how amazing this turned out when I made it–the flavors were incredible. You will not be disappointed when you make this recipe. The beef is so tender, the broccoli perfectly cooked, and the sauce is packed with flavors. Plus, it only takes 30 minutes to prepare, making it the perfect meal for lunch or dinner. Give this recipe a try; I bet you’ll love it.
For the stir-fry sauce:
Cook the ramen noodles so they’re ready when needed. Bring a medium saucepan filled with water to a boil. Once boiling, add the noodles and cook for 3 minutes. Use your spatula to break them up. Drain, then rinse with cold water so it won’t continue to cook. Set it aside for later.
In a large bowl, add all the sauce ingredients and stir until the sugar dissolves.
Heat a large skillet over medium heat. Once hot, add 1 tablespoon of oil, 6 cups of broccoli, and 2 tablespoons of water. Place the lid and sauté for about 4 minutes. Cook until crisp and tender, stirring occasionally. Transfer to a dish.
Increase the heat to medium-high, then add 1 tablespoon of oil. Add beef in a single layer, then sauté for 2 minutes on each side, lowering the heat to medium-low.
Give the sauce a quick stir, then pour into the pan with the beef. Simmer for 3 to 4 minutes, stirring occasionally.
Bring back the broccoli and add the cooked noodles. Stir to combine well. If the sauce is too thick, add 1 to 2 tablespoons of water to thin it out. Serve with sesame seeds and chives. Enjoy!
