Fill a pot with water and place over heat. Add the eggs and bring the water to a boil. Once it gets to a boil, cover it with a lid and set it aside. Since these are large eggs, you need to wait 12 minutes. Once cooked, cool the eggs down by submerging them in cold water.
Slice the avocado in half and scoop the flesh into a bowl using a fork or spoon.
Add two tablespoons of mayonnaise (or Greek yogurt) and 1 1/2 tablespoons of fresh lemon juice. Mash the avocado and mix well with the other ingredients.
Sprinkle chopped celery and herbs into the mixture.
Peel the shell of each egg. To make your work easier, roll it first on a flat surface with your palm, then start peeling it. Before chopping, rinse it under cool water to remove any leftover bits of shell. Slice the eggs into small pieces, then add to the mixture.
Season your salad with a pinch of salt and some ground black pepper. Mix until well combined. Before serving, take a taste test and adjust the seasonings based on your liking. You might need to add more lemon or salt.
Serve with a toast. Enjoy!
