Cheesecake is my weakness and is a pastry that I can probably eat every day if I can. This delicious treat is so good to serve as a snack or dessert, and sometimes I also make this and bring it over for a potluck or gathering.

This is also a great gift to give to a loved one or when you simply need a recipe that you’d like to use apples with. You can make this cheesecake even more special by adding a topping that you like or sweeten it up by drizzling it with caramel sauce. Step 1
In a deep baking tray, add the chopped apples, brown sugar, cinnamon, and sultana raisins, then give them a good toss, and spread them evenly in a single layer. Put them in a preheated oven and allow them to bake at 350°F for about 25 minutes.
Step 2
While waiting for it to bake, grab a large mixing bowl, then mix the brown sugar, flour, butter, and oats until crumbly, then set them aside. In another bowl, add the mascarpone cheese, cream cheese, sugar, eggs, and vanilla, then mix them until incorporated, and set them aside.

Step 3
Transfer the biscuit base to the bottom of a springform cake pan, then press it down firmly, and add the cheesecake filling on top. Spread it evenly and smooth out the surface, then add the baked apples all over the top in a single layer.
Step 4
Crush the biscuit into crumbs, then sprinkle it all over the top until covered. Put the cheesecake inside the oven and allow it to bake at 320°F for about 1 hour, then let it cool down for at least 3 hours in the fridge, and serve!
