Drizzle olive oil into a frying pan and place over heat. Add chopped garlic and cook until it’s golden. Next, add the chopped onion and carrot. Saute until softened.
Stir in 2 tablespoons of tomato sauce, then season with salt and ground black pepper.
Add cooked lentils to the sauteed vegetables, followed by breadcrumbs. Mix until well combined. Sprinkle freshly chopped parsley and mix again. Once done, transfer to a large bowl.
Mash the mixture with a wooden spoon but leave it a bit chunky.
Get a spoonful of the mixture and form into a patty using your hands. Place on a plate and repeat with the remaining mixture.
Place a clean pan over heat and drizzle olive oil. Once hot, add the patties, place the lid, and cook at medium heat until nice and golden. Once the other side is done, flip and cook the other side. If it falls apart when cooking, you might want to add more breadcrumbs. You can also use oat flour so it will hold better.
Serve with your preferred sauce. Enjoy!
