This healthy and super delicious chicken salad by Downshiftology on YouTube is a dish that you will never get enough of, it’s so creamy, tasty, and meaty! You can eat this anytime, anywhere, and pair it with anything you want. This is also pretty easy and quick to make, plus, it uses ingredients most of you may already have available in your kitchen.
Step 1
the first thing you have to do is to prepare the poached chicken. Put the chicken breasts in a wide pot or pan, then pour and cover it with cold water until the height of an inch. Sprinkle and season the water with salt, you can also add aromatics at this point if you want. Place the pot or pan on a stove over medium heat, then bring it to a gentle simmer. Once simmering, bring the heat to low and cover the pan or pot. Let the chicken simmer for about 8 to 12 minutes or until the internal temperature reached 160 to 165°F. Then, remove the chicken and let it rest for a few minutes before putting it in the refrigerator to let it chill.

Step 2
Now you can start making the chicken salad. Get the chicken out of the fridge, then dice it into small half-inch pieces, and set it aside. Slice and dice the celery, green onions, grapes, parsley, and tarragon, then put all of those ingredients in a large mixing bowl. Add the mayonnaise, Dijon mustard, and lemon juice, then season it with salt and pepper. Mix all of them together until well combined, then put it in the refrigerator and let it chill until you’re ready to serve.
