Remove some of the fat from the chicken thighs as much as you can. Next, cut the bacon into little pieces. Do the same for the chicken. Place the chicken in a big bowl.
Prepare your veggies. Cut the bell pepper into cubes about half of its height. For the onion, cut it into big chunks.
Add the seasonings to a bowl and mix them well. Reserve some of the seasonings for the bacon and topping for later, then sprinkle the remaining on the chicken. Toss it around until all are coated well. Drizzle some olive oil and give it another toast.
Preheat your oven to 350 degrees F.
Cover your baking tray with aluminum foil. Make sure to cover even the sides and edges. You can use metal skewers or wooden sticks. If you are going to use wooden sticks, be sure to soak them in the water for 30 minutes, so they will not burn. Spray your sticks with cooking spray. Make the kabobs however you like. Start with the chicken and bacon first followed by veggies, then add more chicken. Repeat until you fill it up. Do the same for the remaining ingredients.
Drizzle a little bit of olive on top and sprinkle the remaining seasonings on both sides of the kabobs. Place them on the baking tray. It’s better to use a metal border to elevate them.
Place in the preheated oven for 30 minutes.
While it’s cooking, make your glaze. Combine all ingredients in a bowl. After 15 minutes have passed, remove the kabobs from the oven and glaze them on both sides. Place them back and continue cooking. For the last 3 minutes, remove them from the oven and glaze them again. Place it back and cook for 3 minutes. Once done, let it cool for 3 minutes before serving.
